The Djimma region in southwestern Ethiopia is known as the birthplace of coffee. The majority of coffee grown there is Ethiopian heirloom, and farming methods remain largely traditional. Coffee is almost entirely cultivated, harvested and dried using manual systems.
Most farms are fewer than 5 hectares, and coffee cherries are typically handpicked by landowners and their family. Post harvest, the coffee is further sorted to remove any damaged or underripe cherries and is dried on shaded raised beds for 10 to 14 days. The coffee is frequently turned and sorted again to remove any defects. This level of detail results in an end product that produces a truly exquisite cup.
