Santa Rita de Cássia Farm, owned and operated by Carlos Henrique and his daughter Dani Alkmin, spans 78 hectares and is situated on the slopes of the Serra de Matiqueira between 910 and 1,250 meters above sea level.
This is a honey-processed coffee, where the outer cherry is removed, but a layer of fruit remains during drying. That process adds a natural sweetness and builds a fuller body. We roasted this lot to balance that sweetness, resulting in a bittersweet, lingering cup with a smooth, medium body. Brazilian coffees are known for being easy to drink, and this is no exception.
